Caroline Manzo Soups Up
The matriarch went a little nutty in her latest recipe.
Looking for something to keep you toasty while winter continues to creep up? Say no more. Mama Manzo has been busy stirring and shaking in the kitchen and the end result is her Butternut Squash Soup. Bring the taste of Franklin Lakes into your own home with these ingredients:
2 carrots
2 celery stalks
3 Yukon Gold potatoes (cubed)
1 large butternut squash (cubed)
2 thinly sliced leeks (white part only)
4 cloves of garlic
1 large and 2 small cans of College Inn Chicken Broth
4-5 table spoons of olive oil
Fresh thyme
Salt and pepper
"In a large pot, sauté onions, carrots, celery, garlic, in olive oil," Chef Manzo instructs her fellow foodies and The Real Housewives of New Jersey fans. "Cook on medium heat until golden brown. Add fresh thyme and stir. Add squash, potatoes, broth to the pot."
Bring the mix to a boil and then let it simmer for 45 minutes, or until vegetables are cooked. "Puree in a blender," says The NJ lady, but she warns, "Don't over fill the blender since the soup will be very hot!" Pour your better-than-the-Olive-Garden soup into a bowl and get slurpin'.
