Tomorrow kicks off Memorial Day Weekend and although the official start of summer isn't for another month, the holiday—which has become a popular day for family gatherings and barbecues—is seen as a sort of introduction to the season.
The Dish recently caught up with Top Chef and Best New Restaurant judge Tom Colicchio at the NBCUniversal Cable Entertainment Upfronts and got his advice for creating the perfect Memorial Day menu. One word: tacos.
"It's the summer of tacos!" Tom declared. "Any kind of taco!"
Of course the discerning chef has favorites—"I like a good goat taco," he shared. But for his upcoming summer gatherings, Tom has something else in mind. "What I like doing in the summer is grilling a whole fish," he suggests.
Tom added his tips for presentation and serving. "Put the whole fish on the table and have all the taco fixings—spicy stuff, some slaw. People can just help themselves. Just scrape all the meat right off the fish."
If your mouth is watering, you're not the only one. When Tom's costars Gail Simmons and Padma Lakshmi overheard his fish taco idea, they inquired about an invite. Tom only had one requirement: "Bring the fish!"
