Caroline Manzo's "Simple and Delish" Weeknight Dinner Will Inspire You to Up Your Home-Cooking Game

The Real Housewives of New Jersey alum Caroline Manzo just put our takeout to shame with this recipe.

OK, Caroline Manzo: You have thrown down the gauntlet, perhaps unknowingly, but we are ready to rise to the challenge. The Manzo'd with Children matriarch shared on Instagram a glimpse into what she was whipping up for dinner on a regular ol' Tuesday evening at home, while some of us around the country were, you know, sloppily lapping sauce out of takeout containers while watching The Real Housewives of Beverly Hills Season 8 finale. (Who can think about proper nourishment on such a big night?!)

On Instagram, Caroline showed off her home-made creation, a masterpiece of goat cheese medallions with arugula, walnuts, peppers, and raspberry vinaigrette. She described the meal every bit as it appears in the pic: "simple and delish." 

We love that the whole meal appears protein packed (thanks to the goat cheese), and wholesome (on a bed of greens), as well as vegetarian friendly (you know, in case Bethenny Frankel ever shows up at our house seeking gracious accommodation and a vegetarian meal).

So we're inspired to whip up something in that mold the next time we have a TV night in with fam or friends. Thanks for the inspo (and perhaps a little bit of unintentional shaming), Caroline!
