Dorinda Medley Shares Video How-To for Her Easy Holiday Leftovers Recipe
The Real Housewives of New York City pal says "this is the perfect after-Christmas hearty" meal.
Those who know Dorinda Medley know this to be true about her. "I love cooking and I love using leftovers," The Real Housewives of New York City pal said in a December 26 Instagram Story. "I like to cook from whatever's left over in my kitchen." And luckily for us, Dorinda showed off just how she uses up her kitchen-pantry surplus during the holidays.
The day's menu? A hearty, delicious split-pea soup that's best when served with crusty garlic bread (aka our favorite side dish). "After-Christmas food is fantastic for soups," she shared. "So today we're making a split-pea soup out of the hambone my mother gave me." Want the exact recipe? Keep reading.
After boiling the hambone all night long, Dorinda added some water, onions, celery, and four cloves of garlic to the pot. In another pan, she was sauteeing "onions, carrots, three cloves of garlic, half a teaspoon of oregano, a teaspoon of pepper, and some kosher salt." She added this calorie-shaving tip: "I use a little olive oil when I'm sauteeing and I use a little of the extra ham broth — so it keeps it low-cal."
Next, Dorinda added some "delicious potatoes" to the sauteed mix, along with the split peas and eight cups of ham broth. Then, it was time to kick back.
"We are ready to let this baby simmer for about two-and-a-half, three hours and then we're going to have a delicious, hearty, split-pea broth. Oh my god, that with fresh bread, a little crispy garlic bread, and we are good to go," Dorinda shared. "This is a perfect after-Christmas hearty soup."
