These Rainbow Lattes Are the Prettiest We've Ever Seen (Buh-Bye Unicorns!)

We can't stop staring at them.

By Maggie Shi

There's out-of-control unicorn everything and a subsequent Goth backlash, but rainbows are still going strong. This healthy rainbow latte from The Good Sort in NYC has been making the Insta rounds (it's made with beetroot, blue algae, turmeric, and coconut sugar), but the original rainbow latte goes all the way back to good ol' days of 2016.

That's when a barista at Sambalatte coffee shop in Las Vegas began creating stunning lattes using steamed milk dyed in various colors. Since then, numerous cafes have joined the rainbow latte movement—and it's still going strong. We thought it was about time to take another look at this ongoing trend, because it's just too pretty to ignore. (And it's a great alternative to all that sugary unicorn crap.)
