Shanique Drummond Reveals the Quick Jamaican Dinner Her Kids Will Always Eat

The Married to Medicine Los Angeles mom whips this dish up in less than 45 minutes with whatever veggies she has available.

If you’re a fan of Married to Medicine Los Angeles, you know that Shanique Drummond loves to cook delicious Jamaican dishes for her family. During the June 13 episode of The Daily Dish podcast, she revealed which recipe she can always rely on when she needs to whip up something delicious that will please the whole fam.

“Being a mom, you struggle with finding a meal that everyone will eat. [My husband] Rob and I will eat one meal, and then the kids, they want pasta or pizza or just something completely different,” explained Shanique. Still, there's one recipe that never fails in her family: curry chicken. "Everyone will eat it, including the kids," said Shanique, who notes the dish is "really easy" to make.

Shanique noted that when she gets home, she can throw the meal together in “45 minutes or less,” adding that it’s also a dish that can be made with really any of the vegetables you may have handy. 

“That’s really simple. It’s just having the right dry seasoning, as well as having the thyme and scallion, which is what really brings in those Jamaican flavors, and just cook the rice. The rice is cooked in about 10, 15 minutes stove top,” she said. 

Shanique also mentioned that she receives weekly deliveries of “imperfect produce” through a subscription that provides customers with vegetables that may look slightly different from what you’d find in a grocery store, but taste exactly the same. 

“Whatever’s in the box or in the kitchen is what I use to add as little side veggies,” said Shanique.
