Friday's Friend For Sunday Night: Turkey And Green Tomato Panini

A glorious weekend of football wraps up Sunday with the Bears of Chicago visiting the Vikings of Minnesota. If you have played your cards right, you have barely stirred since Thursday, and have watched a truly shocking quantity of football. Indeed, a sane person might consider a brisk walk, a Howard Hawks screwball comedy, or time with family. But the true devotee will hunker down and savor the last delicious hours of grown men running into one another at surprising velocities.
But you can loll in front of the TV and be part of the solution. You have that leftover turkey in the fridge, looking more and more like Mr. Burns, and making you keep your beer in the garage, where it only gets sort of cold. Somebody needs to address that turkey. But an actually delicious leftover turkey meal? Yes we can! Rick, of Rick's Picks was kind enough to share his Friday Friend panini recipe, where the turkey gets a kick in the flavor pants from his Green Tomato Condiment. They can tell you where to find them, or you can buy them from the Internet. If time does not allow, whatever chutney is most handy would be a good substitute.
RECIPE
A ciabatta loaf
Leftover turkey
Sharp cheddar cheese
2 or 3 onions
Rick's Picks Green Tomato Condiment, or chutney.
Butter
Peel and chop onions and sauté in butter. Slice the ciabatta in half lengthwise. Layer bottom half with green tomato pickles, turkey, caramelized onions and cheddar cheese. Top with second piece of bread and grill in a panini press or fry in a pan until both sides are golden brown.
