Pasta With Fresh Herbs

Ingredients
8 ounces spaghetti
2 cups assorted fresh herbs (chives, mint, dill, thyme, parsley and basil)
1 small garlic clove, minced
1 teaspoon lemon zest
Salt
¼–½ teaspoon chili flakes
Extra-virgin olive oil
Chèvre (or really any cheese you’d like)

STEP 1
First you’ll set a pot of water to boil with enough salt in it that one taste conjures up images of those horrid accidental times of ingesting a bit of sea water. If you didn’t grow up around the ocean… the water should taste salty. Once boiling, add spaghett
STEP 2
While the spaghetti boils, mince the fresh herbs and place in a small bowl. Add the minced garlic nd the lemon zest; stir to combine.
STEP 3
Toss the herb mixture with the drained, hot pasta. Dot the pasta with chèvre or feta, or top with grated pecorino or parmesan. Or just leave it as is. Finish with good-quality extra-virgin olive oil and chili flakes. You can serve this simple pasta hot or cold.
