Make Gretchen Rossi's Recipe for the Coziest Autumn Dinner Ever — With Step-by-Step Tips

The RHOC alum has her butternut-squash ravioli receipe down pat — and you should see her trick for garlic bread!

We can only imagine how delicious Gretchen Rossi's kitchen smelled on the night of October 8, as The Real Housewives of Orange County alum stirred minced sage — fresh from her garden — into melted butter. Gretchen was sharing a step-by-step guide with her Instagram followers about how to make butternut squash ravioli with browned-butter-and-sage sauce, you see; and we could hardly look away from the cozy dinner party.

Here's what was on the menu: In addition to the perfectly autumnal pasta, Gretchen served garlic bread made on Hawaiian rolls (her beau Slade was in charge of buttering the bread!); the vegetable side was asparagus topped in garlic and melted mozzarella cheese. And to think, the whole thing began with a trip to Costco! 

Showing off butternut squash ravioli that she picked up at the retail giant, Gretchen introduced that evening's impromptu cooking segment: "I got my glass of wine so I'm happy while I'm cooking, and tonight's entree is going to be a mozzarella and garlic asparagus and an organic butternut squash [ravioli] — I picked this up at Costco and it's so good. I picked sage out of my garden, and I'm going to make a brown-butter sauce. It's going to be yummy!" 

Gretchen also revealed that the pasta comes pre-cooked, so all you, the home chef, need to do is throw it into boiling water for three minutes. And while the pasta water boils, you can get to work on the sauce. 

Here's the recipe in a nutshell; we'll also include Gretchen's typed-up instructions below.

First, brown about half a cup of butter in a pan over medium heat. Throw in some minced sage, and be sure to keep moving the butter around in the pan so it doesn't burn. When you start seeing brown flecks on the bottom of the butter, transfer it to a bowl to let it cool; then, whisk in chicken broth and heavy whipping cream. Next, finish the sauce off with half a teaspoon of lemon juice and a quarter cup of Parmesan, and voila! You have the coziest fall dinner ever.
