Top Chef Alum Tiffany Derry Shares Her Perfect Smoked Salmon Toast Recipe
The Top Chef Season 7 finalist has a simple recipe that will turn your snack game around.
Starting to get tired of the food you’ve been eating at home? Tiffany Derry has the perfect solution to solve that snack fatigue. The Bravo’s Top Chef Season 7 alum has a delicious smoked salmon toast recipe up her sleeve, and it’s full of bright and smokey flavors.
Smoked Salmon Toast
- 1 piece of smoked salmon (preferably not cut)
- 1 small fennel bulb, thinly sliced with fronds
- 1 teaspoon of chili flakes
- 2 small cucumbers (thinly sliced)
- 4 radishes (thinly sliced, reserve leaves)
- 1 baguette
- 1 cup of caper lemon relish (which you can find the recipe to below)
- 2 tablespoons of olive oil
- Salt and pepper to taste
Caper Lemon Relish
- 2 lemons (cut into pieces)
- 1 tablespoon of capers (barely chopped)
- 1/2 cup of olive oil
- 1 teaspoon of honey
- 1 tablespoon of fresh dill
- Salt and pepper to taste
Equipment needed:
- Sheet pan
- 6 small bowls
- 2 medium sized bowls
- Non-stick pan
- Plating wood block
- Fish spatula
- 5 spoons
- Cutting board
- Chef's knife
Directions:
- In a small bowl, mix all of the ingredients for caper lemon relish. Set aside.
- Heat a non-stick pan over medium heat. Add salmon, and flip after two minutes to brown the other side.
- Cut the baguette in half (the long way) and toast in the oven for five minutes to crisp.
- Once the salmon is warm and browned, flake into large pieces. Set aside.
- Cut baguette into four inch pieces. Spoon two tablespoons of créme fraiche on bread.
- Take half of a salmon fillet, and place on a piece of bread.
- In a separate, small bowl, mix fennel, oil, salt, chili flakes, cucumber slices, radishes, and greens. Lightly place over the salmon.
- Drizzle relish all over the toast.
