Raw cookie dough might be the thing right now, but nothing beats a freshly-baked batch of cookies still warm from the oven. If your baking skills are zilch and you usually resort to a store-bought tube of dough, this very clever peanut butter cookie recipe from Epicurious is here to save the day.
All you need are three ingredients: peanut butter, sugar, and a single egg. (If you want to add a little savory note to your cookies, flaky sea salt is a completely optional fourth ingredient, for sprinkling.) The quantities are simple, too: 1 cup PB + 1 cup sugar + 1 egg. That's it.
(That's right, no flour—good news for all your celiac/gluten-intolerant/gluten-hating friends.)
Beat the egg, whisk in the peanut butter and sugar, and your dough is ready. Drop onto baking sheets, press with fork tines (for that all-important classic PB cookie criss-cross texture) and bake in the oven. After about 10 minutes, you'll have warm, chewy, nutty, utterly delicious homemade cookies. And no one will ever know how easy it was.
