The Top Chef winner weighs in on pasta salad, angry judges, and more!

on Sep 3, 20090

I thought that the judges were angry this episode! Why were they so angry? You know those judges hate the pasta salad. I gotta say, that’s the ultimate cop out. Seriously? You’re gonna go on TV and make pasta salad? What are you thinking?

Let’s talk about the Quickfire. There was definitely some good stuff and I was impressed. I liked the potato risotto idea, and it was too bad it was a little salty.

I probably could have said that making ice cream in 45 minutes is a little tough unless you have a real high-powered machine and it didn’t get it done. He played it great though. I was hoping he would win because that would have been funny.

But with the risotto, I don’t like the fact that he put mascarpone. You don’t really make risotto like that. Potatoes you have to be a little more gentle with because if they get overcooked they can break apart when you’re trying to beat the crap out of them with a spoon. I would have just gone with butter and cheese. I liked the idea, but it gets creamy anyway.

Harold, for once I totally agree with you about who the final 3 or 4 will be.

This season from the start, the two brothers, kevin, eli and jen are so far superior versus the other chefs.

All those who have been sent home, were so novice, they should NEVER have been on the show in the first place.

You can really see from each week, how much more stylish and really top aces they are above the other chefs.

I am a woman, and love seeing female chefs getting the recognition now days, but the first 3 chefs sent home were females and they deserved it. Bravo, with all the upcoming good female chef's, PLEASE pick better for season 7. Thank you.

Hey Harold - Great to see you here. I have had the pleasure of dining at your NY restaurant - magnifico!!

I felt there was a little higher purpose going on in this episode - yes, competition, but a bigger issue of doing something a little more altruistic. Jen taking over as the kitchen super was a great idea - it kept everyone moving, gave each team an opportunity to fully realize what they wanted to do and ultmately put out a great meal for the troops and family members. The elimination was what it is - something that had to be done and done correctly. Get a grip, Mike I......

Am I the only person sick and tired of Risotto, gnocci and purees and LAMB. What is it with LAMB; do these people ever eat anything else

Harold your win was the only season when I felt the judges were completely fair;

Can you say, HONESTLY, that Hung should have won anything, let alone Top Chef. His attitude stunk, his food was mediocre crap at best and he did whatever he could to sabotage other chefs and seemed proud of it

I want to know where he cooks as I do not want to contribute to his wealth in any way

And besides the bad block party pasta salad, Carlos was sent packing for his Thanksgiving salad. Come to think of it, Mike was also in the bottom for a Greek salad. Are salads just the anathema for TC contestants?

Harold, I have watched every episode of every season and still think you were and still are the best Top Chef. Stef is my pick for second. Enjoy your comments greatly and look for more in the future. My only problem with this latest show was that the Judges didn't recognize Jennifer's role as Chef de Cuisine during Judges Table. As so many in the past have shown poorly in this position, her command of the back of the house was worth being mentioned. Waiting to see you back in some kind of future Past Top Chef competition.

Just wanted to comment about the ice cream: at presentation to the judges he called it a custard to disguise the fact that it was supposed to have been ice cream, and on top of that the presentation of the dish itself was awful imo, a bland colored mush with what a couple of chopped nuts on top? You can get something that looks better and maybe even taste better at Dairy Queen. Sometimes I just can't get the judges perspective. Any decent chef knows you eat with your eyes first, and ultimately taste is king. That dish was a failure imo, sorry. Ash would have been on the bottom if it were me judging.

Seems undercooked should go home before under inspired.

They were really angry. I made a note, if they ever come to my house, *don't* serve pasta salad! ;)

That's interesting about the potato risotto, Harold. So it kind of ends up like mashed potatoes without the mash?

Seriously! I can barely cook, and I've made that same pasta salad!!!

I completely agree with your chef choices. I think it will be Kevin, Jen and one of the brothers in the finals, probably Michael.

I'm with you on the outcome. I do believe that it will be a three way with the brothers and Jennifer. I don't see anything else being outstanding this season so far.

I liked the way Jennifer took command of the kitchen. I would like to see her on Hell's Kitchen. I think she could run the "pass" with ease.

Too right! How many seasons and episodes of Top Chef is it going to take to drill into the contestants' heads that the judges do NOT like pasta salad??!!

I do not understand why Jen agreed not to cook. She is obviously very talented, had immunity and could have won an elimination challenge. What the.........

Harold, I laughed out loud reading the first line of your blog.....I thought it was just me.....watching the epidsode last night I thought to myself, "self, why are the judges so angry??", they genuinely seemed ticked off. I also agree with you about the pasta salad. Certainly the cheftestants could have created a better dish than one most people can prepare in their kitchen at home. It was not very inspiring. Keep blogging!!

Harold,

I'm so glad you're back blogging. You remain and probably always will be THE Top Chef, even if they do 20 seasons. Thanks for sharing your insight...your straight-forwardness is great and your passion for cooking always shines through!

Overall I thought it was an enjoyable episode. This season it seems pretty easier to pick out the winners and the losers without even having the benefit of tasting the dishes. As soon as I saw pasta salad I knew those girls were in trouble. I'm pretty sure pasta salad was in the bottom 3 for the block party challenge in Chicago. What were they thinking!

As of right now I rooting for Kevin the most. He seems to explain his dishes very thougtfully, telling us why instead of just what he put into his dishes without an aire of condesension.

Keep up the great posts Harold. Your writing style is honest and insightful and I can "hear" your voice while I read. Great Job.

I agree with Harold's picks for strongest chefs. I especially like the brothers-they remind me of Harold.

I agree. I knew from the get go that there was alot of talent this season but that quickfire did prove it. I was in such awe (home cook ya know). The pasta salad was even worse(sad?) because of the great creative dishes that were served right next to it.
