Sheldon makes two kinds -- Momofuku-style (ballsy) and umami. His oil isn't hot enough for his first batch of Momofuku-style wings, so he doesn't make enough. Those who do get them are wowed and everyone loved his Umami drumsticks and thighs, sooo he ends up on top.
Lizzie isn't familiar with American fried chicken so she makes spiced fried chicken breasts. She gets some criticism for only using the breasts, but also ends up on top.
Ultimately Josh wins with his smoked fried chicken. The judges all agreed that smoking the chicken before frying it was pretty genius. Josh did his grandfather proud.
Unfortunately, Brooke, Josie, and Stefan don't fare as well. Brooke was actually guilty of poor time managament this time. She didn't crisp her skin as she had planned and was ultimately forced to warm her already-fried chicken in the oven, then re-fry it. Yikes. But, she's safe.
Stefan almost went home for making Chicken Cordon Bleu, and not very well. I actually didn't think the idea was as bad as the judges did, but they may have been more forgiving if it had tasted better. I actually really like Chicken Cordon Bleu. I used to order the Chicken Crave (essentially a Chicken Cordon Bleu wrap) at Pita Pit on a regular basis in college. But, I was also usually drunk, and also, I think we've already proven in this recap that my tastes in college were questionable. Sooo, never mind! But, he's also safe.
And so, that leaves us with Josie. I don't think we've seen Tom this riled up in a long time, but all that fried chicken will do that to you. Josie's chicken was greasy as she didn't have time to rest it on a paper towel. Again, it came back to time management, and, y'know, the curse of Michelle Bernstein. I kid. I kid.
Although I think many if not all of you were ready to see Josie go, I do wonder which you find more forgivable: dry chicken or greasy chicken. I'm not so sure I know my answer. Leave yours in the Comments section below!

I think dry chicken is by far the worse option. There is no way to make dry chicken better. If I have a piece of greasy chicken I can at least use a napkin to soak it up the grease or I can choose to remove the crust all together and still enjoy the juicey chicken underneath. I would not be happy with either but like I said at least I could enjoy the meat for something too greasy. That being said, someone could have put the chicken in the microwave for 90 minutes at full power and I still would have voted for Josie to go home.

Well, I'm a vegetarian but I wasn't always. I think you can save "dry" chicken several ways, butter, hot sauce, ketchup (ok, with a ? by it), mayonnaise(?), pour a little of your wine on it. Greasy? What can you do but not eat it or wind up with serious pain in your gastrointestinal tract.
For someone who supposedly knows herself, Josie seems to have a giant chip on her shoulder which just makes me think she's not comfortable with her abilities...or lack thereof. She's too defensive in each episode. I hope she watches this season and takes a moment to reassess herself, because she's going to end up a very unhappy person if she keeps up the facade she's had going.
BTW-When I saw him talking about his mom, I thought the producers were giving Stefan the "loser's cut" where some personal connection is revealed or thoughts of someone special are displayed and then that person gets the boot. Please continue to NOT foreshadow the eliminations-most people don't like spoilers or obvious clues and it seems to be prevalent on these competition shows.
I like Brooke but girl, did you not see Kristen throwing herself on her sword while Josie made excuse after excuse? You're supposed to speak up in support of your head chef if it is warranted and it certainly was. I would vote that inedibly greasy chicken is worse than the other 2 dishes. If grease is pooling on the plate under the chicken, that is inexcusable, period. The more we get into this season, the more I think bringing back past chefs is a mistake. C.J. seemed to be the only one taking it seriously. Stefan seems to only be trying occasionally and well, we've all seen the Josie show. If you want to have more All-Star TC seasons, please do that and don't inject former contestants into current seasons.

Considering Seattle is home to two of Jiro's students, Daisuke Nakazawa and Shiro Kashiba, it's depressing that Top Chef flew in someone from LA to judge the sushi quickfire, no matter how famous he is.
Finally they got rid of Josie, She really sabotaged Kristen last time. The 3 of them: CJ, Stefan and Josie should never have been allowed back. It was unfair to this set of contestants. If they wanted those 3 back, they should have gone to All Stars, though I don't think Josie deserved to be in either show.
Just another shout out to Jiro Dreams of Sushi. A great movie. And greasy chicken is unforgivable. I'm glad Josie finally got the hammer.
Maybe it's just me, but I didn't care for what appeared to me to be a bit of an ambush on Brooke. Who cares if these guys were once upon a time interviewed by her and didn't get the job at her restaurant? What was the point of pulling that out, at that moment? Was that supposed to be fun? And for whom? How much fun was it to watch Brooke play good sport and squirm uncomfortably? It just seemed mean-spirited rather than amusing.
I'm still ticked off that it took this long for Josie to go. I was not happy when it looked like Padma was going to be launching another defense of her.
As for Stefan and his "bull_$_hit" (stay classy, Padma!), I understand the offering of an embarrassed lame excuse for a subpar dish. What I don't understand is how, as other posters have noted, a woman who should have booted many episodes ago was retained as long as she was.
I used to like Padma, but she started rubbing me the wrong way after the last episode and I could barely stand her presence onscreen this time around.
I could let slide her defense of Josie’s “delicious sauce” versus the overcooked fish and raw shellfish in her dish, but was it really necessary to phrase Kristen’s elimination the way she did? Why say “Josie, you’re safe”? She’s never done that before! I lost any and all respect I had for her.
And yes, she did seemed ready to conduct another campaign to save Josie… what’s up with that? Are they good friends or something?
Celeryar Smacks of jealousy to me. Kristen is arguably the most beautiful cheftestant to ever hit the Top Chef kitchen and Padma's never had any competition on set for beauty.

I am so glad Josie gone Top Chef is my favorite show but I decided that if they didn't send her packing tonight I was not watching the rest of this season. She always has an excuse, The only way this episode would have been better is if Lizzie would not have let Josie use her fryer!
mmilk I disagree, it was great strategy by Lizzie since the moron didn't use Lizzie's fryers obviously and shot herself in the foot yet again. Her excuse at judges table (one of them) was she lost one of her fryers. Duh? She was given TWO fryers by Lizzie and didn't use them, what an idiot.
I usually find dryness less forgivable than greasiness, but when one of the dishes belongs to Josie- who should've gone home about 3 episodes ago- I'm willing to make an exception.
Also, I found it amusing that the judges were all ripping on chicken cordon bleu and calling it airplane food during a *fried chicken challenge*. Look, this is an art that KFC pretty much has mastered, so let's not get all hoity-toity about it, okay?
(For the record, I'm also not a big fan of fried chicken. I don't hate it, I just sort of... nothing it, I guess. So on the scale of calorie-worth-it-ness, it ranks very low.)

Although dry chicken sucks, it can be fixed with a sauce. A greasy chicken is hard to fix without ample paper towels and possible reheating in an oven to have the fat bubble out. Plus the grease gets so heavy that it's hard to eat any more chicken.
I personally would rather have greasy chicken as long as the flavor's good
dakotawilde One can always blot the excess oil from overly greasy chicken, but there's nothing one can do to remoisten dry bird.
I've watched Jiro Dreams of Sushi, and highly recommend it too. It's quite telling that a chef who prides herself for "soul food," is unable to make fried chicken sing.
I hope Kristen makes to the final round. She deserves it. Josie Screwed her over and Kristen didn't defend herself. Woman got some serious Cooking Skills.Good Luck!!!
Last Chance Kitchen is her Best Way to get Back in the Game
So glad Josie is gone. Only watched this week to see if she would be gone. And, by the way, I do not like fried chicken. I take all the skin off the breast and just eat the meat. Watching all the chefs stick the meat in vats of sizzling oil honestly made me a little sick this week. Good episode though because Josie is finally gone.
To answer: I would take dry chicken, you can always just dip it in sauce right? Greasy chicken, you can't even hold it. Josie's chicken, inedible. Thats like the 4th or 5th inedible dish she made right? And she just now got eliminated. Better late than never I guess.

Thank god josie is gone. What took do long. She should have gone home last week. Her behaviour with Kristin last week was disgraceful. Kristin is a real lady. Love the show this year. I like the concept of a fried chicken restaurant called Wolfgangcluck, too funny.

She made the show so painful to watch.....Lazy is the word that comes to mind when I think about Josie..a.too bad Kristen had to go because of her though....hopefully she will come back!
