A hot bowl of chili at the end of the day can be the ultimate comfort food, on a winter night or any night.  And while chili comes in a million forms, from spicy Texas style to vegetarian and well beyond, there are lots more exciting ways to eat it than just dumping it in a bowl. Here, six ideas that will take you from night to morning and back again.

1. Chili Fries

Chili fries are a late-night favorite, and this recipe by Eat Healthy Eat Happy gives them a vegan spin via vegan quinoa chili slathered over seasoned oven fries.

2. Jalapeno Chili Cheese Dogs

It’s not game day without a chili cheese dog. This jalapeno-spiked version from Your Secret Recipes smothers the hot dog in jalapeno chips, refried beans, beef chili and lots of cheese. You may get heartburn but it’ll be well worth it.

3. Chili Casserole

Cornbread and chili is a pair made in food heaven, and this recipe from Family Focus Blog reimagines the duo as a casserole, making a crockpot chili bake out of turkey chili and a cornbread topping. Grab a big plate for this one, and prepare to go back for seconds and thirds.  

4. Chili Polenta

Meatless Mondays don’t have to feel like a deprivation. JL Goes Vegan’s polenta cakes are paired with black bean chili and a bed of collard greens for a dish that feels super-hearty but still stays this side of healthy.

5. Chili Eggs

Chili shows up at the breakfast table, via this pumpkin chili Mexican scramble from Running With Spoons.  There’s lots of spice in this egg dish, but you can cool it with a scoop of guacamole or sour cream.

6. Bulgur Chili Baked Potato
