Madison LeCroy Shows Exactly How to Make Her "Perfect" Pot Roast Recipe

The Southern Charm-er is sharing the details on her go-to homemade meal.

Whether it's sharing her swimsuits or her Halloween decor, Madison LeCroy has a knack for giving expert recommendations on her favorite things. So when the Southern Charm cast member recently raved about one of her go-to recipes, were immediately intrigued.

On Season 9 Episode 2, Madison was telling a "funny story" about cooking a special meal for her husband, Brett Randle. "I made a pot roast for Brett. My pot roast is really good," she said, noting things took a turn. "He sat there, ate, left all the carrots around, and then I was like, 'Oh my god, he's allergic to f-cking carrots.'" However, she gushed, "He didn't complain one time. It was so nice."

During the same episode, which aired on September 21, Madison mentioned the dish once again while sharing that she likes "to play house" now that she's married. "If it's making pot roast, if it's gardening, if it's nesting in the home, you know, I know what I'm doing," she said. 

Naturally, some viewers were curious to learn more about Madison's now buzzed-about pot roast, and she was happy to share all of the details in a recent social media video.

In the caption of Madison's October 4 TikTok video, she shared the ingredients she uses to make her pot roast:

  • "4-5 lb. chuck roast"
  • "2 tbsp. olive oil"
  • "2 whole onions" 
  • "6 to 8 whole carrots"
  • "1 c. red wine"
  • "1 c. beef broth"
  • "[Mashed] potatoes (in another pot)"

She also showed exactly how she makes it. "What I do is put some flour, salt, and pepper on the roast in my little Le Creuset," she said in the clip, adding, "We do this for about three minutes on each side, and then I'm gonna take this off, put in the carrots and onion with some red wine... and...beef broth."

"I do put mine over mashed potatoes, so I don't put potatoes in this," she added. "I had to learn that the hard way."

Showing the sizzling meat before she added the remaining ingredients, she explained, "You can see how it's crusted on there [after] about three minutes on each side, and there's just butter and garlic in there right now."

Next, Madison let the meat rest on a cutting board while she chopped the onions and then added both to the pot. After that, Madison explained, "We're gonna add carrots, and then I normally do a cup of red wine. It doesn't matter, whatever you have. And then as far as beef broth, I do a little bit of [Swansons]."

"Then I put it in the oven for 275 [degrees] for around three hours," she concluded. "If you have a four-to-five-pound chuck roast, you can do it for four hours."

Noting that some viewers of the show might be confused to see her making the meal with carrots after discovering Brett's allergy, Madison clarified, "That's raw carrots, so we're all good." 

Once it was finished, Madison happily exclaimed, "It's gonna be perfect."
