Teddi Mellencamp Arroyave's Super-Easy, No-Cook 4th of July Recipe Uses a Trader Joe's Staple

Teddi Mellencamp Arroyave is all in when it comes to keeping her diet clean. And yes, that includes on holidays. Luckily, the All in by Teddi founder has a few tricks up her sleeve when it comes to whipping up festive — but still healthy! — dishes that are perfect to bring to parties, and she's filling us in on her 4th of July go-to. 

The salad that Teddi has been known to whip up for Independence Day checks all the boxes. It's dressed with red, white, and blue ingredients to give it a little patriotic zhush, it doesn't require any cooking, and its star ingredient can be found at Trader Joe's.

Ingredients 

1 large boneless and skinless chicken breast, baked and diced (Teddi uses the Lemon Pepper Chicken from Trader Joe's, which can be found in the prepared foods section) 

4-6 cups spinach 

1/2 cup sliced strawberries 

1/2 cup blueberries 

1 tbsp good quality olive oil 

1 tbsp balsamic vinegar 

Salt and pepper 

Directions 

• Whisk together oil and vinegar; add salt and pepper to taste 
• Place spinach in large salad bowl
• Top with chicken and berries
• Toss in balsamic dressing just before serving
