Caroline Manzo Hacked a Knockout "Dinner for One"
The Real Housewives of New Jersey alum Caroline Manzo used a few simple ingredients to whip up this fancy-looking dish.
Though her cake-wrangling skills are questionable (if you ask her daughter Lauren Manzo Scalia, at least), Caroline Manzo has some evident skills when it comes to whipping up a lovely dinner for one. In a recent Instagram Story, The Real Housewives of New Jersey alum showed off a dish that looked pretty fancy, but it's actually easy to replicate. Here's what to do:
Brush phyllo dough with some olive oil. Then, top it with marinated zucchini, yellow squash, peppers, "and a little ricotta salata as a bonus." Bake it, and bingo! "Dinner for one," wrote the seasoned home chef. Caroline plated her solo feast on the famous checked dinnerware we've spotted in her kitchen before.
