Top Chef Season 9 winner Paul Qui is finally getting ready to open the doors to his highly-anticipiated new Austin eatery, qui, on June 20th! 

The James Beard award winner and Texas chef extraordinaire is using his international background as a drawing board for the restaurant. His travels in America, San Sebastian, France, Copenhagen, Mexico City, Vietnam, and Japan will serve as inspiration for his culinary creations, as well as his significant training at Austin hotspot Uchiko.

“I want to create a space where the possibilities for my cuisine are limitless,” said Qui in a statement. “I’m inspired by our surrounding community, as well as by exploring those boundaries beyond Austin and Texas. I enjoy learning from different creative outlets including food, but also art and design, all of which will be incorporated at qui.”

Paul previously said that qui’s emphasis with be on extreme seasonality.

I’m looking at seasons within seasons,” he explained. “I’m not just looking at like, for these four months I can get strawberries. ...all right, out of these four months, which are the ones where I can get the best strawberries? That’s the beauty of having a small menu. I can be nimble.”  

No matter what season it is, there’s no doubt in our minds that qui will be delicious!
