Three-Ingredient Ice Cream Sandwich Hacks That Will Make You Look Like a Dessert Genius

Got cookies and ice cream? You've got dessert.

On days when it's 90 degrees F and rising, is there anything more heavenly than an ice cream sandwich? The dessert couldn't be simpler: just two cookies clutching a thick layer of ice cream, and sprinkled with toppings if we're feeling fancy. Here, six unique ideas that follow the basic formula but add unexpected spins, from rolling butter pecan ice cream in chopped nuts, to combining tropical-inspired flavors like mango rolled in coconut flakes. 

Cookie Dough Crunch

Spread 1 ounce vegan cookie dough (or eggless cookie dough) onto one side of a double chocolate chip cookie. Top with 1 scoop vanilla bean ice cream (slightly softened) and sandwich with another double chocolate chip cookie. Let freeze on a 1/2 sheet pan for at least 1 hour before serving.

Buttery Nut

Set 1/2 cup pecan meal (finely chopped pecans) in a small bowl. Top 1 gluten-free ginger snap with 1 scoop butter pecan ice cream. Gently sandwich the ice cream with another cookie and roll in pecans. Let freeze on a 1/2 sheet pan for at least 1 hour before serving.

White Chocolate, Lemon and Blueberry

Set 1/2 cup white chocolate chips in a small bowl. Top 1 Italian lemon pizzelle cookie with 1 scoop lavender-blueberry gelato (or another floral flavor such as lemon mascarpone). Gently sandwich the ice cream with another pizzelle and roll in white chocolate chips. Let freeze on a 1/2 sheet pan for at least 1 hour before serving.

Rum Raisin

Set 1/2 cup granola in a small bowl. Top 1 oatmeal raisin cookie with 1 scoop rum raisin ice cream. Gently sandwich the ice cream with another cookie and roll in coconut. Let freeze on a 1/2 sheet pan for at least 1 hour before serving.

Tropical Tryst

Set 1/2 cup unsweetened coconut flakes in a small bowl. Top 1 coconut wafer cookie with 1 scoop mango ice cream, or other fruity tropical flavor. Gently sandwich the ice cream with another cookie and roll in coconut. Let freeze on a 1/2 sheet pan for at least 1 hour before serving.

Caramel S'more

Top 1 graham cracker (broken into 2 squares) with 1 scoop caramel swirl ice cream. Sandwich with remaining graham cracker half and let freeze 1 hour. Pour 1/2 cup quick-hardening chocolate syrup into a small bowl. Dip corner of cold sandwich into the syrup and freeze immediately on a 1/2 sheet pan for another hour.
