Aloha Tom, Love your show, #1 because i am learning a lot about cooking and food and creativity, #2 because of the personalities and uniqueness of the humans involved with Top Chef, especially you and Padma.
As a gluten-intolerant human, may I suggest that you consider having a challenge in which humans with allergies or intolerances be taken into consideration? Especially since much of the crap sold in food stores and marked gluten free is either (a) not gluten free, or (b) tastes like sawdust.
My favorite restaurant in the world so far is the organic vegetarian gluten free restaurant named Cafe Gratitude in San Fran. It would be nice to see more places like this open up around the country, and Top Chef could be instrumental in promoting healthy tasty food for all kinds of people with all kinds of bodily ailments.
