Nini Nguyen's "Amazing" Kabob Recipe Is the Perfect Vacation Meal

When cooking for a large group on vacation, it can be challenging to come up with a recipe that everyone wants to eat and is also quick and easy to make. With that in mind, Bravo’s Top Chef alum Nini Nguyen is here to help you plan a meal for your next big getaway with your loved ones. In the video above, Nini breaks down her go-to “simple recipe to make when you’re together when friends on vacation,” and it looks beyond mouthwatering.

From the comfort of an “incredible Vrbo vacation home,” Nini makes chicken kabobs with a variety of vegetables. “Skewers are a great way to get everyone together,” she explains in the clip. “You can use whatever vegetables you like… This is where people can customize.”

Nini Nguyen’s Grilled Kabob Recipe

Serving size: 2

Ingredients

  • 1 lb meat (any boneless chicken, wings, or beef)
  • 2 whole roma tomatoes, halved lengthwise
  • 10 whole mini sweet bell peppers (or 2 red or yellow bell peppers)
  • 1 head broccoli or 1 bunch broccolini
  • 1 yellow squash
  • 1 zucchini
  • 1 box whole mushrooms
  • 1 1/2 tsp salt, plus more for seasoning veggies
  • 1⁄2 onion, grated
  • 1⁄2 onion, chopped into extra-large pieces
  • 1 Tbsp lemon juice
  • 1⁄4 cup yogurt

Directions: 

  1. Place meat, grated onion, yogurt, salt, and lemon juice in a bowl and mix until meat is evenly coated.
  2. Leave at room temperature to marinate for 30 minutes. Chicken can marinate as long as overnight in the refrigerator. If using beef, be careful not to marinate too long beyond 30 minutes. 
  3. Skewer one large onion slice, then your meat, and then bookend with another slice of meat and peppers if desired.
  4. Skewer the tomatoes on a separate stick, the peppers on a separate stick, and other vegetables on a separate stick.
  5. Grill or broil until browned on all sides. Serve immediately.

Chimichurri sauce
Ingredients (Makes about 2 cups)

  • 2 cloves garlic, finely crushed
  • 1 bunch cilantro, roughly chopped
  • 1 bunch parsley, roughly chopped
  • 1 bunch oregano, picked
  • 1⁄4 cup white vinegar (use less if you want it less acidic)
  • 1 cup olive oil
  • Salt, to taste

Directions:
By hand:
1. Finely mince the garlic and turn it into a paste.
2. Finely chop the herbs and mince as well.
3. In a bowl, mix the vinegar, olive oil, garlic paste, and salt.
4. Add the herbs and mix well.
5. Taste for seasoning and adjust if needed.

In a blender:
1. Place the garlic, roughly chopped herbs, and salt in a blender.
2. Add the vinegar and olive oil.
3. Pulse until incorporated.
