Apple Bread Pudding with Cinnamon Yogurt

Ingredients
Bread Pudding:
- 1 loaf whole wheat bread, diced
- 4 eggs, beaten
- 1 1/3 cup skim milk
- 1 cup low-fat cottage cheese
- 2 oz brown sugar
- 2-3 granny smith apples, grated
- 1/3 cup raisins
Yogurt:
- 2 ½ cups low-fat yogurt
- 1/3 cup reduced apple juice
- 1 tsp ground cinnamon
Compote:
- 1 cup apple juice
- 2-3 Tbl brown sugar
- 1 cup raisins
- 1 ½ cups granny smith apples, small diced
Cinnamon Tuile:
- 1 cup flour
- 1 Tbl ground cinnamon
- 1 egg
- ¼ cup water
Directions
For the Bread Pudding:
Preheat oven to 350-degrees F. Toss together all ingredients until thoroughly mixed. Place in greased baking pan and bake for 40 to 50 minutes, until set and browned on top.
For the Yogurt:
Mix together all ingredients.
For the Compote:
In a saucepot, combine apple juice, brown sugar, and raisins, and reduce by half. Add apples and cook for 10 minutes.
For the Cinnamon Tuile:
Mix together all ingredients. Pipe onto silpat in desired shape. Bake at 350-degrees F for 10-12 minutes until golden brown.
To Assemble:
Slice bread pudding and place over yogurt. Serve with compote and tuile.
