Brown Butter Cake, Whipped Goat Cheese & Blackberry Sauce

- 1 cup butter
- 1 teaspoon vanilla bean paste
- 1 cup sugar
- 4 whole eggs
- Half cup flour
- Quarter teaspoon salt
- Half cup plain goat cheese
- Half cup heavy whipping cream
- 1 tablespoon vanilla bean paste
- 2 tablespoons honey
- 1 cup halved blackberries
- Quarter cup water
- 2 tablespoons bourbon
- 1/8 cup sugar
- Juice of 1 lemon
To Make the Cake:
1.) In a bowl, whisk together eggs, sugar, paste, and salt.
2.) In a saucepan, melt butter and toast until brown.
3.) Pour brown butter into sugar and egg mixture, and whisk immediately.
4.) Add flour and whisk until smooth.
5.) Pour batter into greased cake pan. Bake until firm (30 minutes in oven at 350F).
To Make the Goat Cheese:
Whisk ingredients together until firm (whipped cream texture).
To Make the Blackberry Sauce:
1.) Take half of the blackberries and add the rest of ingredients into a small saucepot. Bring to a simmer.
2.) Blend together, and strain.
3.) Take remaining blackberries, and toss with sauce.
