Crispy Lamb Chop with Artichoke 3 Ways

Ingredients
Lamb:
- 1 Tablespoon Garam Masala
- 1/2 teaspoon Salt
Braised Artichokes:
- 2 cups White Wine
- 1 cup Water
- 2 tablespoons Garlic, chopped
- 1/2 cup Mirin
- 1 Tablespoon Butter
Artichoke Chips and Sambal Mayo:
- 1 Artichoke, each
- 1 cup mayonnaise
- 1 teaspoon Fish Sauce
- 1 Tablespoon Sambal
- 3 Tablespoons Lime Juice
Lamb:
- 2 ea Lamb Chops
Braised Artichokes:
- 1 Artichoke, each- trimmed
Directions
Lamb:
1. Season chips and fry until medium
Braised Artichokes:
1. Combine artichokes and mirin butter in a sauce pan. Cook until artichokes are tender and mirin butter is glossy.
2. Add the remaining ingredients and reduce over medium high heat.
3. Season with salt. Serve.
Artichoke Chips and Sambal Mayo:
1. Slice artichokes thin on mandoline.
2. Fry at 350 degrees and season with salt and pepper.
3. Mix remaining ingredients to create mayo.
