Frozen Singapore Sling with Tropical Fruits

Ingredients
- 4 liters coconut milk
- 16 sheets gelatin, bloomed
- 200 grams sugar
- 4 each vanilla
- 200 ml gin
- 10 limes, juiced
- 15 oranges, juiced
- 2 pineapples
- 2 pounds cherries
- 8 mangos
- 16 dragon fruit, hallowed out
- 8 kiwi
Directions
1. Bring coconut milk, sugar, vanilla, and gelatin to a boil
2. Strain, keep in a warm place for use later
3. In a blender mix gin, lime juice, orange juice, pineapple and cherries
4. Freeze the mixture to make a granita
5. Pour the coconut milk into the hallow dragon fruit, refrigerate to set gelatin
6. Garnish the coconut with mango, kiwi, cherry, pineapple, orange, and lime
7. Top off with granita
