Top Chef Masters, Season 4, Episode 5, Elimination Challenge
1. Combine yeast, sugar, and warm water in bowl. Proof yeast until bubbly.
2. In a separate bowl sift flour and salt. Cut butter into flour. Stir in yeast, mayo and buttermilk. You may have to use extra flour to make a soft dough. Allow dough to rest, roll out and cut into biscuits.
3. Preheat oven to 400 degrees Fahrenheit. Place on sheet pan and allow to rise at least 20 minutes. Bake for 20 minutes and brush with butter.
1. Mix all ingredients together and chill. Make into burgers and grill to 165 degrees Fahrenheit until done.
Tomato Ginger Chutney:
Place all ingredients in heavy pan and cook slowly till reduced and thick.
