Southern Fried Chicken Skin with Squash Casserole and Tomato

Ingredients
- 1/2 Onion
- 1 tablespoon butter?
- 2 Garlic Cloves?
- 1 1/2 cups Butternut squash
- 3 tablespoons Cream
- Lemon juice to taste?
- 2 cups cherry tomatoes?
- Skin from one chicken?
- 1 tablespoon Cayenne Pepper
- 1 tablespoon Sugar
- 1 tablespoon Pepper?
- 1 tablespoon Salt?
- Frying Oil?
- Olive Oil
Directions
For Squash Casserole:?
Cook onion, julienned over medium heat with butter and garlic until lightly caramelized. Then add diced squash to onions, reduce heat to low and simmer until all water is cooked out- about 30 mins. At that point at cream and transfer mixture to a blender. Blend on high and season with salt, pepper and lemon juice. Pass mixture through a chinois and reserve.?
For Tomatoes:
Score, blanche and shock cherry tomatoes- then peel them. Season with salt, pepper and olive oil. ?
For Chicken Skin:?
Remove all fat from chicken skin- leaving only a very thin sheet of skin. Season skin with salt, pepper, cayenne and sugar. Refrigerate for 1 hour. Then with a paper towel blot chicken skin dry to drain all water. Fry at 370 degrees until golden brown. Break into shards.? ?
To plate:?
Spoon squash mixture on bottom of plate and top with tomatoes. Sprinkle chicken skin shards over the dish. ?
