There have been so many times we wished we could teleport into Caroline Manzo's kitchen to have a taste of what she's cooking. The Manzo'd with Children matriarch makes elaborate Italian meals but she also knows how to make simple dishes that taste good enough to eat multiple times, like this quick boiling stew of eggplant, zucchini, bell pepper, potatoes, garlic, onion, and basil that she posted on Instagram after showing off a simmering dish of chicken and broccoli rabe to be served over chickpea pasta.
"Also making one of my favorites, giambotta (think vegetable stew) to keep in the fridge for my fat a** to eat all week," she said with a dose of self-deprecating humor.
Not only does that seem like something healthy and satisfying that you wouldn't get tired of after a couple of days, it no doubt freezes well, too.
