When you look good, you feel good!
That's the entire premise behind Ladies of London star Julie Montagu's upcoming cookbook Superfoods: The Flexible Approach to Eating More Superfoods. After the yoga instructor and former model had her fourth child, she realized it was time to make some changes.
"Having a fourth child almost put me over the edge," she admits to The Daily Mail. "People try to tell you it's no big deal going from three to four children but, trust me, it is! I was exhausted and surviving on caffeine!"
That's when she started to use food as a solution, instead of a problem. "I'd always been fairly healthy, but it wasn't until that point that I'd really thought of food as medicine," she reveals. After enrolling in an online nutrition course and plant-based program at Cornell University, she became "completely obsessed."
Now, the healthy living expert (formally known as Viscountess Hinchingbrooke) is promoting superfood-based recipes to feed the soul—and though she admits some ingredients may not be the easiest to find, her cookbook is flexible.
"It's not always easy to find or justify buying all the ingredients, I get it, but I've been careful in the book not to add, say, bee pollen to every recipe," she says. "And it's also always OK to substitute; so olive oil instead of coconut oil, or brown rice instead of black."
And it's always okay to occasionally treat yourself. "The other day I was having lunch with a girlfriend; I ordered kale, she ordered fries, but of course we ended up sharing," she says. She admits that she would order them herself, "but if there is a sweet potato option you should always go for that."
So far the book is getting rave reviews, and Julie couldn't be more excited. "Just wanted to say a HUGE ENORMOUS thank you to all of you have bought my book Superfoods as I just looked on Amazon and it has 25 x 5 Star reviews!!!!!" she captioned a pic on her Instagram. "Can't quite believe it so I just wanted to thank you guys for so much love and support!"
