If anyone knows how to transform classic desserts into wildly original pastries that hit the sweet spot, it’s Dominique Ansel (of Cronut and Cookie Shot fame). His latest? An innovative twist on the popular Spanish and Mexican snack, the churro, a deep-fried pastry resembling a cruller.
Ansel's Churro Duo is much more involved than it sounds: The pastry consists of two interlocking 3D churro pyramids, one made with black sesame and black sugar, and the other made with white sesame and cinnamon sugar. Both are fried-to-order and served warm with an accompanying side of salted caramel dipping sauce.

Alas, for now you can only get this at Dominique Ansel Bakery Japan in Tokyo. But while he ponders bringing the dessert stateside, you can sink your teeth into these 5 other inventive churro riffs—made with everything from cookie butter to salt cod—closer to home.
