So, what's the secret? It's mayonnaise. That's right: plain old mayo. Instead of oil, use mayonnaise in a simple chocolate cake recipe to create an impossibly fluffy, creamy, rich texture that will blow everyone away at the next birthday shindig.
Delish uncovered the recipe in the Kansas City Star, where Jasper J. Mirabile Jr. of the local Italian market Marco Polo's talks about how the shop's popular chocolate cake is made with none other than mayo—thanks to his mother's inspired solution for making cakes moister. It used to be called Mama Josephine's Chocolate Mayonnaise Cake, but the store long ago dropped the mayo mention out of the name; still, people still occasionally come in and ask for the "Mayonnaise" cake. According to Mirabile, the use of mayo in chocolate cakes dates back to the 1920s and became prevalent during World War II, when ingredients like butter and oil were rationed.
