Forget Cinnamon: The Most Exciting Way to Spice Up an Apple is with a Dash of Pepper

Everyone loves a good mashup. Why settle for one great dish or flavor when you can have two? You've probably heard of the Asian food trend that involves salting and spicing fruit, like salted spicy mangoes in Thailand and Vietnam, or spiced watermelon in India, but you may not have even considered combining the sweet, tart flavor of fresh apples with the bite and mild heat of black pepper.

Why do apple and black pepper pair so effortlessly well together? Most apples are a combination of sweet and sour flavor notes, while freshly ground black pepper offers spicy heat and bitterness. It's a flavor mashup even non-Asian cuisine chefs and food bloggers are getting excited about, using the combination in everything from lightly spiced apple galettes to black pepper specked ice cream with an apple topping. The duo goes beyond just dessert though, because even BBQ ribs are made richer and deeper with the addition of ground black peppercorns and crisp apples.

Sure, you can top your plain, straight-up sliced apples with a dash of black pepper (and salt) at home, but don't be surprised when you see this magical pairing popping up everywhere from down-home brunch spots to elegant restaurants, as a delicious foil for dishes like roasted chicken and other meats.
