The Real Housewives of New Jersey alum Caroline Manzo recently announced that she lost 20 pounds — and that the mysterious "surgery" she'd earlier alluded to was in fact a face lift. Given those significant physical changes, the Manzo'd with Children matriarch has described feeling like an all new woman with a fresh outlook on life in her 50s.

But as it has always been for Caroline, one of her truest joys in life is in food and cooking. These days, however, she's especially focused on light, clean fare — and she revealed that a new vegetarian diet is behind her significant weight-loss progress.

To that end, Caroline is all about whipping up light but drool-worthy salads for lunch, recently taking to Instagram to show off a stunning serving of food most people would consider a triumph of a meal. But for Caroline, it's merely the version of something even better she'd have made if she hadn't been feeling "too lazy."

Showing off a black-and-white patterned bowl containing a colorful salad, Caroline captioned her Instagram pic: "LUNCH - kale, cucumber, carrot, broccoli, Brussels sprouts, cabbage in white lemon balsamic vinegar and olive oil. I usually add chick peas and tomato but was too lazy."

Hey, one woman's lazy is another woman's divine.
